When you installed a managed package app into your Salesforce instance, you cannot edit the label of the fields. If you click Edit button, both Field Label and Field Name is disabled. So, how to change the label? Here we go: Press TAB to move to next editable field or SHIFT-TAB to go to the previous editable field. Click Save button and done.

  1. From the object management settings for the object whose fields you want to view, go to Fields.

  3. To modify a custom field, add custom help text, or change the data type, click Edit.

If not, then with justification, Salesforce can roll back your released package to a Beta state, which will allow you to remove fields and re upload. If the package version is installed anywhere though, this wont work.
