To resolve an unresolved email recipient Open the email editor and select the unresolved email recipient. In the Lookup Rows pane, select New Row.

can fix this setting by navigating to Setup>Personal Settings>Email>My Email to Salesforce and ensuring the "If no matching records are found, create a task for each recipient and sent it to "My Unresolved Items" is UNCHECKED. Screenshot attached - hope this helps!
