It isn't used to create Salesforce records. It isn't available in standard reporting. However, to see your activity data aggregated, you can use the Activities dashboard and Activity Metrics fields. The data retention period determines the how much email data is stored and for how long.

How do I turn off Lightning sync in Salesforce?

Turn Off Lightning SyncFrom Setup, in the Quick Find box, enter Einstein Activity Capture , and then select Settings.From the Configuration tab, click Turn Off Lightning Sync.
